What you need

  • 4 Weetabix
  • 2 eggs
  • 2 teaspoons of hollandaise sauce
  • 30g chorizo (sliced)
  • 1 teaspoon of oil
  • 1 avocado
  • A handful of baby tomatoes
  • A drizzle of balsamic glaze
  • A pinch of chilli flakes, salt and pepper

What to do

  • To poach your eggs, bring a saucepan of water to the boil, add a pinch of salt and then break your eggs (one at a time) into a mug and pour gently into the saucepan. The eggs will take 2--4 mins to poach based on how firm you want them.
  • As they cook, slice the chorizo and fry with a teaspoon of oil in a pan.
  • Remove the two poached eggs with a slotted spoon and place one onto each Weetabix, followed by the hollandaise sauce and fried chorizo.
  • For the next stack, place your smashed avocado onto your two Weetabix.
  • Then add freshly chopped baby tomatoes and a drizzle of balsamic glaze.
  • Finish all with a sprinkle of chilli flakes, salt and pepper. Bread. Who needs it?
