What you need

  • 2 Weetabix
  • 250g rhubarb
  • A handful of fresh blueberries
  • A handful of hazelnuts
  • A dollop of blueberry and lemon compote (or you can use blueberry jam and mix in the zest of 1 lemon)
  • Zest of 1 orange
  • 1 large tablespoon of lavender yogurt (or natural yogurt)
  • A squeeze of honey

What to do

  • Dice up the rhubarb and roast with the hazelnuts, honey and orange zest on a baking tray for 15 mins at 180c.
  • As this roasts, put your Weetabix in a bowl, complete with the yogurt and blueberry and lemon compote.
  • Add the fresh blueberries before topping it all off with the roasted hazelnuts and rhubarb.
  • Looking for a finishing touch? Add a drizzle of honey.
