Rhubarb-and-custard-a-bix

What you need

  • 2 Weetabix
  • 250g rhubarb
  • 50g caster sugar
  • 2-3 star anise (for flavour only)
  • 200g of tinned custard
  • Handful of chopped hazelnuts
  • A splash of rhubarb syrup (or try maple syrup)
  • 1 teaspoon of cinnamon

What to do

  • Wash the rhubarb stalks and cut them into inch-long pieces and add into a saucepan.
  • Then bring to the boil with three tablespoons of water, sugar, cinnamon and star anise, and leave to simmer for eight mins.
  • Pop your Weetabix in the bowl, add your custard (this can be hot or cold!) and the stewed rhubarb, plus a splash of the rhubarb syrup to taste.
