Brunch-a-bix

The great British breakfast with a twist! Just as tasty as a fry up at your local café, but a fraction of the price. Grubs up!

What you need

  • 2 Weetabix
  • 2 potatoes
  • 1 egg
  • 1 garlic clove
  • A pinch of dried coriander, dried basil, salt and pepper

Toppings

  • 1 poached egg
  • 1-2 rashers of bacon (chopped)
  • 1/4 onion
  • 80g spinach

What to do

  • Just prick a few holes in the potatoes with a fork, and microwave on high for 3-4 minutes, turning over once
  • Add one egg and mix in chopped garlic, coriander, basil, salt and pepper. Now divide the mix into patties
  • Bake for 20 mins at 180°C and turn them every 5 mins
  • Then fry off the chopped bacon in a drizzle of oil, add onion and fry until golden, before adding the spinach and cooking until it wilts
  • Finally, finish off with a poached egg. Cracking! Careful it's hot
