Oatibix Pancakes

What you need

  • 2 Oatibix biscuits
  • 2 eggs
  • 1 ripe banana
  • 1 cup of self raising flour
  • 150ml milk
  • ½ tsp vanilla extract

What to do

  • Crush the Oatibix biscuits into a mixing bowl
  • Whisk the eggs until fluffy
  • Blend all of the above ingredients into a batter
  • Heat a non-stick pan on low heat
  • Cook each pancake individually by adding some butter or oil to the pan and frying either side for a couple of minutes until turning a little brown and crispy
  • Enjoy your pancakes with your favourite fruits!
